The true secret to this drink is the Tomato Rosemary Shrub. If you haven't made a shrub before, it's a simple, ancient technique used to preserve fruit or herbs in a sweet, vinegary syrup.


Why use a Shrub?

The vinegar (we use Apple Cider Vinegar, or ACV) provides an acidic counterpoint that mimics the "bite" or complexity of alcohol, making the drink feel structured and adult.


Gut Health: ACV is well-known for its digestive benefits. Incorporating it into a delicious daily drink is an easy way to support your gut flora.


Unique Flavor: The tomato provides an earthy sweetness, and the rosemary adds a Mediterranean, woodsy aroma that pairs beautifully with the touch of spice.


The Recipe

Smoked Rosemary & Spicy Tomato Refresher

This recipe is broken down into two easy stages.


Stage 1: The Tomato Rosemary Shrub (Make Ahead)

This makes about 1 cup of shrub, enough for 6-8 drinks. Store it in the fridge for up to 3 weeks.


Ingredients

1/2 cup Apple Cider Vinegar (ACV)

1/4 cup Granulated Sugar

1/4 cup Water

1/2 cup Diced Fresh Ripe Tomato (Heirloom or Roma work great)

1 large sprig Fresh Rosemary


Instructions

1. Make Simple Syrup: Combine the sugar and water in a small saucepan. Heat just until the sugar dissolves. Remove from heat.


2. Muddle: In a clean glass jar, gently muddle the diced tomato and the rosemary sprig. You want to bruise the rosemary to release its oils, but not completely smash it.


3. Combine & Steep: Pour the warm simple syrup and the ACV over the tomato/rosemary mixture. Stir gently.


4. Infuse: Cover the jar and allow it to cool to room temperature (about 2 hours). Transfer the sealed jar to the refrigerator. Let it steep and infuse for a minimum of 6 hours, or ideally 24-48 hours, for the best depth of flavor.


5.Strain: Strain the liquid through a fine-mesh sieve into a clean bottle or jar, pressing the solids gently to extract all the liquid. Discard the solids.


Part 2: Building the Refresher (Per Serving)


Ingredients

2-3 Tbsp Tomato Rosemary Shrub

1 oz Freshly Squeezed Lime Juice

1 dash Hot Sauce (Cholula, Tabasco, or your favorite mild-to-medium heat)

Chilled Club Soda or Sparkling Water

Ice

Garnish (The Showstopper)

Smoked Salt (Do not skip this! The smoke element is crucial.)

Lime wedge

Fresh rosemary sprig


Instructions

1. Prep the Rim: Pour your smoked salt onto a small, flat plate. Run a lime wedge around the rim of your serving glass, then gently press the rim into the salt to create a beautiful, savory crust.

2. Mix the Base: In the prepared glass, combine the shrub, lime juice, and hot sauce. Stir briefly to combine.

3. Add Ice and Top: Fill the glass completely with ice. Top the mixture with chilled club soda or sparkling water.

4. Final Aroma: Take a fresh rosemary sprig and gently slap it against the back of your hand a couple of times (this "wakes up" the fragrant oils). Place it upright in the drink alongside a fresh lime wedge.
